300x300_S2-paxtonchoc_210513-articleI am extremely excited to have my very first edible Colour + Pattern = Joy! feature today.  Not only can you eat these patterns, but they’re made of chocolate.  Handmade, artisan chocolate into the bargain, flavoured with delights such as Earl Grey and orange, mixed citrus flavours of clementine, lemongrass and lime, delicate raspberry and rose, fragrant lavander and bergamot, and zingy candied chilli.  Things just don’t get any better in my book.

Caitlin Paxton founded her eponymous brand in December 2012 after discovering her passion for chocolate whilst training to be a Pastry Chef.  She places great emphasis on top quality raw ingredients from the very best suppliers.  The chocolate couverture comes from a company in Belgium that has been producing the finest chocolate for over 100 years from sustainably grown cocoa beans, and the dried flowers and extracts come from Scotland, where they are selected for their provenance and quality.

Once the ingredients are mixed, the chocolate is piped onto digitally printed transfer sheets that Caitlin designs herself, left to set, and then the backing paper is carefully pulled away leaving the pattern behind on the chocolate thins. You can watch the process on the short video below:
